Abstract (EN)

In recent years, studies on induction heating method have been intensified due to the disadvantages of conventional methods of heating liquid foods. In this thesis, an induction heating system which heats liquid food passing through a steel pipe is designed and tested. Mathematical modeling of induction heating system and coil design stages are given in detail. Modeling and analysis of induction heating systems with multiple coils was carried out when it was observed that the temperature distribution on the steel pipe heated by a single coil is not homogeneous. Due to the effect of coupling between coils, independent control of power in multi-coil systems has been found to be very difficult and complex. Then, two novel power control methods are proposed in the thesis. An induction heating prototype of 1200 W was designed and experimental measurements were performed and compared with theoretical analysis and simulation results. As a result, the proposed method was found to be suitable for controlled heating of liquid foods homogeneously by induction heating method.
