Abstract (EN)
Heat-resistant fungi are not affected by heat treatment applications thanks to ascospores. The survival of these molds causes food degradation and economic losses and directly affects human health with the mycotoxins they produce. With the development of nanotechnology, the ability of nanoparticles to prevent heat-resistant molds has been discovered. In this study, antifungal activities of zinc oxide nanoparticles and their silver doped forms were investigated against to heat resistance fungi. In the food and beverage industry, recommendations have been made to minimize food spoilage and to minimize preservatives used to prevent fungal growth.
