Abstract (EN)
In this study, meat yield and chemical quality of Chup (Squalius cephalus) caught inKeban Dam Lake were investigated. The study was carried out between October 2006 andSeptember 2007. A total of 112 Chup ( 52 females, 60 males ) were used in this study.Annual mean meat yield in Squalius cephalus 55.98±4.70 % females and 57.63±3.38 %males.Chemical analyses showed that female and male Squalius cephalus had 65.20±2.66?65.54±2.68 % moisture, 18.08±1.53?18.01±2.07 % protein, 14.31±1.84?13.97±1.89 % fat,1.12±0.15?1.11±0.16 % ash, 0.9581±0.004?0.958±0.006 aw in the their meat. 78.58 % ofstudied fish speciments was establised in the 4-5 age interval.In the result, meat yields and food elements as protein and fat of chup samplesexamined were determined in the high quality.Key Words: Squalius cephalus, Meat Yield, Moisture, Protein, Fat, Ash, aw., Age.
