Abstract (EN)
Today, high fructose intake with processed foods is considered as an important health threat in the formation of chronic diseases. Fructose is popularly known as fruit sugar. Fructose is primarily absorbed in the small intestine and metabolized in the liver. It has the same energy charge as glucose. However, it does not create a feeling of satiety and satiety like glucose. Ready-made foods and beverages containing high fructose are consumed more because they do not create a feeling of satiety. Selenium (Se) is an essential trace element for living organisms known to have strong antioxidant (AO) and cell protective properties. The necessity of selenium and its beneficial role in human health have been known for several years. The aim of this study is to investigate the possible protective role of Se and the effect of it on high fructose corn syrup. In the study, fertilized specific pathogen-free eggs were used. On the 5th day of the incubation period, the eggs were divided equally into 4 groups. Each group was allocated 10 eggs containing viable embryos. These groups are; Pre-Process Control, Post Process Control, high fructose corn syrup (HFCS-55), high fructose corn syrup and Se (HFCS-55+ Se 10-6) groups. One pellet without active ingredient was placed on the chorioallantoic membrane of each egg in the control group, and pellets containing active ingredient (HFCS-55, HFCS-55+ Se 10-6) were placed in the other groups with care. In this study, we examined the HFCS-55's, effect on oxidative stress, and the protective effect of Se using the CAM model. Oxidative stress status in the control group egg white containing HFCS-55 and HFCS-55+ Se 10-6 and without any substance was determined by total oxidative stress (TOS) and total antioxidant capacity (TAS) methods. In our study, a significant increase in TOS levels and a significant decrease in TAS levels were observed in egg groups given HFCS compared to other groups. In our study, it was observed that the group given HFCS+Se was 2 times lower when comparing the OSI value compared to the HFCS group. As a result, we have confirmed with this study that HFCS increases oxidative stress. In line with our data, we observed that Se, an AO element, plays a protective role against oxidative stress
