Abstract (EN)
This thesis study was conducted by using face - to - face survey method with 250 randomly selected consumers in order to investigate consumption and purchase behaviors of poultry meat in Igdır province. In this study, it was aimed to determine the consumption preferences of the consumers and the factors affecting their buying behaviors by taking into consideration the descriptive characteristics of the subjects such as age, gender, education level and income level. The youngest of the surveyed consumers is 17 years old, the oldest is 77 years old, and the average age is 32.24. 54.4% of consumers are young and 41.2% are middle-aged. 60.8% of the participants are male, 39.2% are female and 52.4% are married and 47.2% are single. 68% of the consumers participating in the research reported that the first preferred meat type is red meat, while 23.2% reported chicken meat and 8.4% reported fish. 88.8% of consumers reported that they do not consume poultry except chicken meat. 5.6% of the consumers stated that they consume turkey meat and 1.6% consume goose meat. The reason for choosing chicken meat is appropriate price for 45.2% and easily accessible for 23.6%. Consumption of consumers is reported to be at least 1.5 kg and maximum 60 kg, while the average consumption is calculated as 14.1 kg. 46.4% of consumers reported that they consume 1-10 kg of chicken meat per month. 62.4% of consumers consume chicken 2-3 times a week, 52% of consumers prefer to buy chicken meat from supermarkets. 31.6% of consumers attach importance to the freshness of chicken meat, 20.8% to be village chicken and 17.6% to its appearance. The most important factors affecting chicken meat consumption are household income, the number of individuals in the family and the sex of the consumer. One of the reasons why it is consumed more than other poultry meats is easily accessible. Key Words: Igdır, Meat consumption, Poultry meat, Chicken meat
