Mineral content of some crustaceans and molluscs in Turkey and public health risk assessments

Abstract (EN)
This study examined the mineral and heavy metal content of 9 different sea products sold in retail outlets in Turkey. Group A: frozen squid pan; Group B: frozen ring squid; Group C: frozen mussel meat; Group D: Frozen shelled clam; group E; frozen shrimp; Group F: frozen crab delight; Group G: frozen octopus; H group; fresh-shell mussel and group S: frozen cuttlefish. Frozen ring squid, clam, frozen shrimp, frozen crab delight, frozen octopus, fresh shell mussel and frozen cuttlefish are from Turkey; frozen squid pan from Spain; frozen chili mussel from Chili. Different packages belonging to group A contain aluminum (Al), vanadium (V), manganese (Mn), iron (Fe), nickel (Ni), copper (Cu), zinc (Zn), rubidium (Rb), strontium (Sr) and barium (Ba) contents were statistically different (p<0.05). When the data of the frozen squid pan are examined, the macro element contents are listed as sodium (Na)> potassium (K)> calcium (Ca)> magnesium (Mg) respectively. The mean Na and Mg contents of the packages belonging to group A were not statistically different (p>0.05). Group B contains high levels of Sr, Zn and Fe, which are microelements. The Fe content of clam meat (group D) is over 100 mg kg-1. The Zn content of group D exceeds 20 mg kg-1. The As content of octopus samples (Group G) is over 32.75 mg kg-1. The main microelements detected in all groups examined in the study are Zn, Fe and Al. The minimum Na/K ratio was determined in the G and H groups. It was found that the heavy metal levels of all groups examined in the study did not pose a risk to public health.
