Reinterpretation of nationally known dishes with einkorn

Abstract (EN)

Siyez wheat (Triticum monococcum) is an ancient grain that has been cultivated for thousands of years. It is a high-protein, low-gluten wheat that is rich in nutrients, including fiber, vitamins, and minerals. Siyez wheat has a number of health benefits, including reduced risk of heart disease, improved blood sugar control, and increased satiety. In addition to its health benefits, siyez wheat is also an important part of Turkish cuisine. It is used to make a variety of traditional dishes, including bread, pasta, and pastries. Siyez wheat has a distinctive flavor that is both nutty and flavorful. This study investigated the potential of siyez wheat to be used in a wider variety of foods. Eight products were developed using siyez wheat, and these products were evaluated by a panel of 10 tasters. The results of the sensory evaluation showed that the products were well-liked by the tasters. In particular, the bread, pasta, and pastries were all rated highly. These results suggest that siyez wheat has the potential to be used in a wider variety of foods. This could help to increase the awareness and consumption of siyez wheat, and it could also provide people with a healthier and more flavorful alternative to other wheat products. The data analysis was conducted using descriptive statistics (frequency) analysis in the SPSS program. The results showed that all of the panelists, except for one, gave the products a score of 7 or higher out of 9 on the general level of appreciation scale. This study provides evidence that siyez wheat has the potential to be used in a wider variety of foods. This could help to increase the awareness and consumption of siyez wheat, and it could also provide people with a healthier and more flavorful alternative to other wheat products.
