Abstract (EN)
Today, the standardization of food prescriptions is a matter to be emphasized. On this subject there are very few studies that can be called scientific or academic. People or institutions have made up their own prescriptions for meals they prepare; however, they do not address a certain standardization work in this process. The standardization of food prescriptions is of great importance in terms of the transition of the meals of a city like Gaziantep, which is rich in food culture and diversity, and the culture of these foods to future generations. All of the meals proposed for standardization in the study are those found in Gaziantep cookbooks. These meals were selected according to certain criteria within the framework of standardization studies and it was tried to be arranged in the light of five different cook books and five different restaurants offering local dishes to the guests in Gaziantep. The study was structured according to the document scanning method. At the end of the study, the sensory analysis test of the dishes prepared with standard meal was carried out. The results of the analyzes were also evaluated.
