Determination of the red wine production potential of acikara grape variety

Abstract (EN)
In this study, the potential for processing the Acıkara grape variety (Vitis vinifera), a black grape grown in the Elmalı/Antalya region, into quality red wine and conformity of high-quality red wine parameters from the wines obtained from Acıkara grapes were investigated. Characteristic properties, phenolic maturity and phenolic features of berry structure; general composition, color features, phenolic and aroma compound composition of Acıkara wines were examined. Spectrophotometer and HPLC-DAD were used for determining the phenolic composition of grapes and wines; GC-FID-MS were used for identifying and quantifying aroma compounds in wines; descriptive sensory analysis was conducted for determining the sensory profile. It was determined that the Acıkara grape has a small and short grain size, round grain shape, and a blue-black skin color, with colorless pulp. The total phenolic compound content in the whole berry, skin, and seed were found to be 1196 mg/100g (fresh weight), 1332 mg/100g, and 6554 mg/100g (dry weight), respectively. The total anthocyanin content in the grape skin was found to be 640 mg/100g (dry weight), and the total tannin content in the seed was determined to be 52 mg/g (dry weight). 15 anthocyanin compounds were identified in the grape skin, with a total content of 13625 mg/kg (dry weight). The total phenol content in the wine was observed to be 2212 mg/L, the total anthocyanin content was 1006 mg/L, and the total tannin content was 2.5 g/L. 15 different anthocyanin compounds were detected in Acıkara wine, with a total anthocyanin concentration of 1852 mg/L. 7 macro-level and 48 micro-level aroma compounds were detected in wine and their total amount was determined to be 316.4 mg/L. The characteristic aroma of Acıkara wine is largely composed of esters. In examining the sensory properties of Acıkara wine, it is established as a wine with a medium purple colour, medium body, and predominant aromas of dried plum, cherry, and spices.
