Abstract (EN)
In this thesis study, the work safety studies in the production processes of the Bread Plant of Adana Metropolitan Municipality were examined. 5x5 matrix risk analysis method in the context of work safety and HACCP risk assessment in the context of food safety. Attempts have been made to determine the likely causes of accidents, run-down and food safety hazards. The 5x5 type matrix method and the HACCP assessments have identified the measures to be taken for the identified hazards and risks and the measures necessary to ensure that the risk levels can be reached at acceptable levels.
