Abstract (EN)
In this study, it was aimed to determine the effect of anthocyanins on microorganisms extracted from waste fruits and vegetables using different solutions. Waste fruits and vegetables(grape, strawberry, mulberry, red cabbage, pomegranate, black carrot, beet and cherry) were collected in the markets and anthocyanins were extracted from these samples using different extraction solutions. Anthocyanins were obtained from using different concentrations etanol, metanol and their aqueous mixtures. The amounts of the total monomeric anthocyanins of the extracts obtained were determined using the pH differantial method. Antimicrobial effects of the extracts were determined by the detection of Minimum Inhibitory Concentration (MIC) values for Staphylococcus aureus (ATCC 6538), Escherichia coli (ATCC 8739), Salmonella typhimurium (ATCC 14028), Listeria monocytogenes (NCTC 11994), Aspergillus brasiliasis (ATCC 16404) ve Candida albicans (ATCC 10231).
