Determination of yield, quality and antioxi̇dant properties of some durum wheat (Triticum durum Desf.) varieties

This thesis was conducted at the research and experimental fields of Adnan Menderes University Agriculture Faculty Research Farm during wheat production period in 2014. The research is based on randomized block design and aimed to determine yield and quality properties of 9 durum wheat (Triticum durum Desf.) varieties (Şölen, Turabi, Ege, Çeşit 1252, Tüten, Gap, Yaren, Alatay ve Kızıltan) in Aydın ecological conditions. For this purpose plant height, number of ears per square meter, number of grains per ear, 1000 grain weight, grain yield, protein, fibre, oil, ash and starch content of wheat grain were determined. In addition, changes of total phenolic content and antioxidant activity of the wheat grain which have significant contributions to health were also analysed. According to the obtained yield and quality results; plant height values ranged from 82.4 to 104.4 cm, number of ears per square meter from 318 to 525, number of grains per ear from 39.3 to 56.2, 1000 grain weight from 38.2 to 47.3 g, grain yield from 406.3 to 700.3 kg/da, grain protein content from 12.21 % to 15.07 %, ash content from 1.51 % to 1.91 %, starch content from 56.53 % to 61.02 %, total phenolic content from 221.63 to 386.37 µg GAE/g and total antioxidant activity from 15.15 % to 22.17 %. Among the varieties Tüten variety had the highest grain yield value while Çeşit 1252 came to the forefront in terms of grain protein content and had the highest grain quality. As a result considering the data obtained from the study, it was concluded that high yield and quality of durum wheat can be grown in coastal areas of the Aegean region.
