Abstract (EN)

In Turkey, which is at the forefront of hazelnut production, this product, which is generally grown in the Black Sea Region, is stored by drying like other food products, extending the life of the product. Many drying methods have been developed for this type of products, which are generally dried in the open air, due to the unsuitable ground and climatic conditions. These methods are costly to set up and operate. It is planned to reduce this cost by drying the product and calculating the moisture content. One of the methods to be used for this is artificial intelligence techniques. In this thesis, artificial neural networks and fuzzy logic based inference system, which are artificial intelligence techniques, are used for the estimation of these drying parameters. In this master's thesis study, many different models of the artificial neural network were created, the model with the best results was compared with the fuzzy logic inference model, and it was aimed to establish a prediction system by examining their proximity to the experimental data.
