Abstract (EN)

Blackberry (Rubus L.) is a very significant berry species. Its manufacturing has grown in Turkey in recent years. Our province of Bursa is one of the regions where intensive cultivation is practiced. This study was conducted in Turkey's Kestel/Bursa region, which is known for its blackberry production. The study looked at the physical and chemical features of three blackberry varieties: Chester, Jumbo, and Prime-Jim. The Jumbo variety has the largest average fruit weight (9.41 g). The Chester variety had the widest fruit (23.33 mm), whereas the Jumbo type had the longest fruit (34.74 mm). The Jumbo variety had the maximum vitamin C content, measuring 57.90 mg/100 ml. When total phenolic substance was examined, the highest value was found in the Jumbo variety (7875.33 µg GAE/g). When the free radical scavenging (DPPH) activity was examined, the highest value was found in the Prime-Jim (83.75) variety. It was observed that the examined varieties were important in terms of both physical and chemical properties. Especially Jumbo and Chester varieties stand out in terms of fruit size.
