The effects of pasteurization process and different brine concentrations on the properties of cecil cheese

Abstract (EN)

In this research, Çeçil cheeses were produced from both raw and pasteurized milk and brined in different concentrated (10 %, 12 %, 14 %) brine solutions for 15 days, vacuum packaged and stored. Some physical, chemical and sensory properties of Çeçil cheese were investigated at 1., 15., 45. and 90. days of storage period. According to results; pH values of Çeçil Cheeses which is produced from raw milk are lower than those produced from pateurized milk. The effect of pasteurization on pH values at 1., 15. and 45. days of storage was found significant (p<0.05), while the effect of pasteurization on titratable acidity values was found significant only at 45. day of storage (p<0.05). Dry matter and protein ratios of Çeçil cheeses which produced from pasteurized milk are more than those produced from raw milk. In general an increase was recorded in ripening values of Çeçil cheeses. The salt rates of Çeçil cheeses which is produced from raw milk are more than those produced from pasteurized milk. Çeçil cheeses produced from pasteurized milk and stored in 12 % brine solutions have taken highest points from sensory analysis.
