Abstract (EN)
ABSTRACT Ms. C. Thesis Inonu University Graduate School of Natural and Applied Sciences Department of Chemistry XV +114 pages 2002 Supervisor: Prof. Dr. Satılmış Kaya In this study, it was aimed to determine Fe, Mn, Zn and Cu levels in some dried legume such as been, lentil and chickpea which were collected from different towns of Malatya. It is important to apply a digestion method without causing an elemental losses in the content of dried legumes which have important part in our daily nutrition with their rich complex organic matrix. The samples were digested by using traditional wet ashing and microwave techniques, and Fe, Mn, Cu, Zn levels were determined by Flame Atomic Absorption Spectrocopy. Percent Recovery of elements was investigated for both methods and some parameters like, acid value, temperature, sample amount, power and digestion time were tryed to be optimized. KEY WORDS : Iron, Manganese, Zinc, Copper elemental analysis, dried legumes, wet ashing, microwave-digestion, flame atomic absorption spectroscopy, bean, lentil, chickpea
