Abstract (EN)

In the study, protein value and Glutathione S-Transferase value of 16 local wheat varieties, 7 registered wheat (Gün-91, Kıraç-66, Köse-220/39, Ç-1252, Bayraktar-2000, Eminbey, Kunduru-1149) and 1 einkorn wheat enzyme activity were investigated. Protein values, GST enzyme activity and correlation between protein and GST enzyme activities in landraces and registered varieties of wheat were investigated. The study was carriedout in Denizli Pamukkale University Faculty of Applied Sciences and Science Faculty Biochemistry and Molecular Toxicology Laboratory in 2022. Wheats landraces were collected from 6 different districts of Denizli (Acıpayam, Tavas, Güney, Pamukkale, Çameli, Çivril), protein values were studied by Lowry method and GST activities were studied with DCNB substrate by spectrophotometric method. According to the results of there search, the differences between the protein values and GST enzyme activity values in wheat were found to be statistically significant. When the protein values are examine damong wheat varieties, einkorn wheat has the highest values with 15,53 mg/ml, and Kunduru-1149 has the second highest values with 13,52 mg/ml. The lowest protein values were determined in wheat landraces. YÇ4 has the highest GST enzyme activity with 299.7 mmol/min/mg protein, YÇ10 265.3 mmol/min/mg protein. A negative and high correlation was found between wheat protein values and GST enzyme activity.
