Abstract (EN)
This study was undertaken to investigate antifungal effect of DL-limonen on yeasts by disc diffusion and minimum inhibitory concentration (MIC). Futhermore, effect of DL-limonen on ethyl alcohol fermentation by Saccharomyces cerevisiae was also investigated. According to disc diffusion results, developlement of inhibition zone was observed with all the microorganisms tested. The inhibition zones were larger than those with Fungizone antibiotic which was used as the control. As the concentration of DL-Limonene increased, diameters of the inhibition zones were increased, too. MIC results varied between 500-4000 ? g/ml depending on the yeast strain. DL-Limonene inhibited alcolic fermentation by S. cerevisiae and affected the aroma compounds formed.
