Abstract (EN)
In addition to land plants, aquatic plants are also important for human nutrition. Watercress, one of these, is also used to protect digestive and kidney health, cleanse the body of toxins, and prevent the development of cancer cells. In the literature review, it was determined that the root, stem and leaf parts of watercress in Turkey were used in different solvents (water, ethanol and water + ethanol). No study has been found to investigate its biochemical content using The aim of this study is to examine the species belonging to the Brassicaceae family. Different parts (root, stem and leaf) of Watercress (Nasturtium officinale R. Br.), a semi-aquatic plant, are produced as water and ethanol. Antioxidant capacity, total phenolic substance amount, fatty acid and vitamin content will be determined using solvents. Study It will be carried out between 2023 and 2024.
