Abstract (EN)

In this study, the effects of in vitro antioxidant and antimicrobial activities of plant extracts Eremurus spectabilis Bieb., Silene chlorifolia Sm. and Plumbago europaea L. which were collected in Elazığ and its vicinity, and only antioxidant effects of Saccharomyces cerevisiae and Kluyveromyces lactis in cultural medium are investigated. In the study, the free radical scavenging activity, flavonoid, resveretrol and sugar contents, lipid peroxidation (LPO), levels of fatty acid, lipophilic vitamin values, protein and glutathione amounts were measured. The antimicrobial activity studies, Escherichia coli, Staphylococcus aureus, Epidermophyton sp., Candida albicans were determined. For this purpose, control, fenton reactive (FR), the groups that contain plant extracts and their combinations were used.According to results of the experiment, in vitro medium, it is determined that in FR group, LPO amounts increases in a large ration with respect to the control group (p<0.0001), and LPO levels in groups which includes plant extracts and FR, decreases in certain amounts. The LPO lowering effect of plant extracts were determinated to arising from phytochemicals such as flavonoid. In the studies on S. cerevisiae and K. lactis, it was examined that protein, fatty acid levels were effected by extract and FR addition. It was detected that in fatty acid composition of S. cerevisiae and K. lactis which were in the effect of FR and plant extracts, there was a different rate of increment in the levels of palmitoleik, stearic, oleic, linolenic and linoleic acids according to the control group (p<0.0001, p>0.005). Furthermore, it was determined that adding plant extracts decrease the level of glutatyon in S. cerevisiae but it increases this level in a significant amount in K. lactis? (p<0.0001, p<0.001).Antimicrobial activity of plant extracts were found in different rations.Key Words: Eremurus spectabilis, Silene chlorifolia, Plumbago europaea, lipid peroxidation, antioxidan, antimicrobial, Saccharomyces cerevisiae, Kluyveromyces lactis, in vitro, fatty acid, vitamin, sugar, flavonoid
