A research on the grape juice phytochemical properties in terms of berry size groups in Papazkarasi cv. on grafted different rootstocks

ABSTRACT A RESEARCH on the GRAPE JUICE PHYTOCHEMICAL PROPERTIES in TERMS of BERRY SIZE GROUPS in PAPAZKARASI cv. on GRAFTED DIFFERENT ROOTSTOCKS Semih ERİŞKEN Department of Horticulture MSc. Thesis Supervisor: Prof. Dr. Elman BAHAR The research was carried out by Mustafa Çamlıca Consulting Services and Agricultural Enterprises Ltd. Sti.in 2021 in Kırklareli province Pınarhisar district Poyralı village Karadere locality. It was made in the trial vineyard. In the experiment, 10 to 1103P/Papazkarası, 110R/Papazkarası, 420A/Papazkarası applied vines were used. Purpose of the research; it is the examination of the morphological and phytochemical examination of rootstocks and sizes, separating from 1 control and 5 sizes in the clusters of Papazkarası trainings grafted on 3 different American grapevine rootstocks. In order to carry out the study, breaking and controlling the large sizes of the sieves of 12 mm, 12,00-14,00; 14,00-16,00; 16,00-18,00 and ≥18 mm is also the base complex of these sizes on the clusters. As a result; 420A/Papazkarası combination showed the best adaptation to the regional conditions in terms of morphology. When examined in terms of phytochemical composition, ≥18,00 mm size group of 1103P/Papazkarası combination comes to the fore among the rootstocks and sizes of primary metabolites in must. In the study conducted with these combinations in the region, maturity indices, °Brix and % alcohol values were found to be insufficient in terms of rootstock and size, and it is recommended to perform processes such as cupping and screeding to increase these criteria to the desired level. When we examined the secondary metabolites on rootstock basis, ≤12,00 mm and 12,00-14,00 mm size groups of 110R/Papazkarası and 420A/Papazkarası combinations gave high values. It is recommended to continue such studies in order to determine the sensory analyzes in wine in order to determine the wine quality apart from the must quality. Better quality wines can be obtained by sieving or applying different methods to reduce berry size.
