Abstract (EN)
In this study, Siirt's and Sirnak's Hicaz and Zivzik pomegranate types retention period and quality changes have been determined. The fruits have conserved in the following conditions 1+1 C and 90% propotional moisture for 6 months. The fruits have waited for shelf life at the following conditions 20 oC, and 65% proportional moisture for 7 days in the beginning and the end of the period. During the storage period and shelf life, physiological and chemical changes have been determined with periodical analyses weight loss (%), respiration rate, total soluble solids (%), the amount of titratable acid (%), pH, the amount of rotten fruit (%), the peel color of fruit (h), vitamin C amount, total phenol content and antioxidant activity and the appearance. Considering the physiological and fungal causes, it has been observed that Hicaznar fruits can be preserved up to 6 months without much economic loss. It has been observed that Zivziknar fruits can be preserved up to 4 months without much economic loss.
