In the literature, L-malic acid production generally has been carriedout by using microorganism. In this study, L-malic acid production has beendone by using fumarase enzyme. Fumarase has been immobilized in chitosangels. Immobilized enzyme has been used for L-malic acid production fromfumaric acid in packed bed reactor.The conversion yield of fumarate into L-malate was obtained as 60,7% at 28ºC,pH 8,5 for one hour.
