Determination of the effect of pomegranate shells extract on quality parameters during cold storage (+4 oC) in horse mackerel crockets

Abstract (EN)
While fish croquettes have an important place in terms of ready consumption, different types of aquatic products are also evaluated within the scope of this product. In this study, the determination of the effect of pomegranate peel extract, which is not considered as waste, on the quality of croquettes made from horse mackerel (Trachurus mediterraneus) during cold storage (+4 oC) was investigated. Sensory, physicochemical and microbiological analyzes (total aerobic mesophilic bacteria, mold and yeast) of horse mackerel croquettes under cold storage conditions has been made. As a result of the analysis, the pH value of the croquettes was 6,07 for the control croquet group on day 0, while it was 5.68 for the croquettes with pomegranate peel extract, and at the end of 16 days of storage, this value was determined as 6,12 and 5,36, respectively. While TVB-N values were 16,5 mg/100g in the control croquette group on the 16. day, it was 14,54 mg/100g in the croquette group with pomegranate peel extract. On the 16th day, the TBA value was found to be 2,49 mg MA/kg in the control croquette group and 1,39 mg MA/kg in the croquette group with pomegranate peel extract. Total aerobic mesophilic bacteria count was 3,71 log10 kob/g on day 0 in the control croquet group and 6,72 log10 kob/g on day 16, and 3,75 log10 kob/g on day 0 and 5 on day 16 in the croquette group with pomegranate peel extract. It was determined as 5,71 log10 kob/g. Yeast and mold amounts were found to be 4,80 log10 kob/g and 4,75 log10 kob/g in the control croquette group and the croquette group with pomegranate peel extract on the 16. day, respectively. In the sensory analysis results, it was determined that the purchasing desire score of the control croquette group was lower on the 10. day and the shelf life of both groups was sensorially ended on the 13. day. As a result of the analysis, it was determined that the antioxidant property of the pomegranate peel extract will have a positive effect on the quality and shelf life of fish croquettes.
