A folkloric study on Kahramanmaraş cuisine

Kahramanmaraş province has hosted many civilizations due to its geographical location and history. In the city of Kahramanmaraş, each civilization has inherited its culinary culture, which is an important carrier of cultural heritage, to the next generation. In this context; the subject of this thesis is food and beverages that occur during transition periods, special days, holy months and feasts and folk beliefs centered on food and beverages, table manners, the culture of hosting guests, kitchen tools and equipment, and oral cultural products that are the reflection of culinary culture in the province of Kahramanmaraş. In this thesis study; first of all, the transition periods were focused on and the culinary culture that manifested itself in those periods was examined. The act of eating and drinking has continued in all periods of human life. Eating and drinking practices that appear on special days and holy months have been researched and revealed. Additionally, the beliefs and practices that developed around the kitchen were studied. Along with all these, works that emerged as a result of the reflection of Kahramanmaraş culinary culture on oral literature are included. At the end of the thesis, foods, drinks and kitchen tools and equipment from Kahramanmaraş region were introduced
