Determination of chemical composition for some wild edible mushroom species from Kastamonu

Abstract (EN)

Fungi have a long tradition in Turkey, also known as a powerful sources of chemical compounds. In this study, five different mushroom species, which are widely grown in the Kastamonu region forests and collected and consumed by the public, Antioxidant properties, total phenolic contents (TFI), Amino acid values and elemental contents were determined in the following order: Boletus edulis, Hydnum repandum, Cantharellus cibarius, Craterellus cornucopioides and Ramaria fennica. As a result of the antioxidant properties, inhibition percentages of the tested fungi ranged from 2.38% to 88.05%, while IC50 (inhibition constants) values ranged from 0.03 to 13.98 mg / mL. The total phenolic contents (TFI) of fungi, measured by Folin-Ciocalte-directed fungi, varied between 7742.2-657.4mg GAEs / kg. B. edulis and R. fennica were found to have the highest TFI values (7742,2-6431,6mg GAEs / kg). These were followed by C. cibarius, H.repandumve C. cornucopioides (2178,8, 1320,9 and 657,4mg GAEs / kg, respectively). The elemental contents of the fungi were determined by means of an inductively coupled plasma optical emission spectrometry (ICP-OES). Finally, organic compound contents were determined by GC-MS. The quantities of organic compounds determined as the result of the analyzes made are 56 in H. repandum, 52 in C. cibarius, 54 in R. fennica, 53 in B. edulis and 49 in C. cornucopioides. As a result of the analyzes, it is determined that among these five fungi species which are widely grown in Kastamonu region, B. edulis protein source is a type of fungus which can be consumed richly; There is a need to increase the use of such properties, which is a richer fungus in terms of the pharmacological properties of R. erica.
