Abstract (EN)

In this study, the drying of cultivated mushrooms at different light temperatures using LED technology was investigated. Here, the principle of heat transport by radiation was utilized. The drying characteristics of the dried mushroom samples were determined by using LED lights with three different temperature values placed in the drying cabinet by utilizing the principle of heat transfer by radiation. The applications realized in the drying process were evaluated with the algorithm created with artificial intelligence application. In addition, the effect of drying conditions on the color of the samples was examined. In this study, temperature meter, color measuring device, caliper, precision balance and volume measuring container were used. One-way Analysis of Variance and Tukey's Test were applied with SPSS to determine the significance of the data obtained from the experiments. In the analyses performed separately for each group, within-group and between-group relationships were examined. The difference between the treatments was determined at 0.05 significance level. The effects of different drying methods on mushrooms were examined and weight values were determined by statistical analysis. The highest weight value was observed in the sun drying method, while the highest difference was found between the traditional drying and the methods applied in the drying cabinet with 4000K LED light.
