Abstract (EN)

According to TUİK statistics, cultured fish productions of Turkey in 2015 was become 240.334 metric tonnes. Cultured fish both export and rides on domestic market as chilled or frozen whole fish, chilled or frozen fillet. Machine vision is that a tecnique can give digitally its colour values, by image for any object analysis using a software. It can perform colour measurement all the object or at area that user wants. It may be a small amount of color change depending on storage for fish. These changes can be detected using computerized image not detected by the human eye. Thanks to the structure that contains an array of chemical sensors and sensor, electronic nose is a device capable of very precise measurements. Examples for use in both commercial and scientific research are available for electronic nose. In styrofoam boxes, the culture seabass and seabream brought to the laboratory as iced without direct contact was stored between 0-4°C. To determine the quality and shelf life during storage total volatile basic nitrogen (TVB-N) and trimethylamin (TMA-N) for volatile compounds, thiobarbuturic acid reactive substances value for oxidation as the chemical analysis, total viable count and psychrotrophic bacteria microbiological analysis was performed. Simultaneously, the sensory analysis and the texture profile analysis was applied. Instrumental computerized image analysis applications and electronic nose analysis was performed. After evaluation of the thesis findings, whether utilizaion of the machine vision and the electronic nose during monitoring of cultured fish quality stored in the cold was appropriate, was determined.
