Abstract (EN)

This study was carried out on the eggs of breeding animals consuming 100 g of commercial layer feed per animal per day during a production season in goose production farm of the Ministry of Justice Van -Ercis Open Prison at work dormitory. Ten egg samples were taken randomly each week from 1-2 years old breeding flock that had 200 female and 80 male geese during production period. The egg yolk roche scale (RCF), Minolta L *, a * and b * visiual color parameters, fat soluable antioxidants (Vitamin A, E, total and individual carotene) and water soluable antioxidants in albumen (Ascorbic acid with GSH) of free range geese eggs according to weekly change status from February to May were investigated. At the end of the study; RCF, Minolta L* brightness, a* redness and b* yellowness values were varies and statistically significant differences were observed according to months (p <0.05). RCF, a* redness and b*yellowness values were significanly lower in February compare than April and May and L* brightness values were the highest in February (p <0.001). The egg yolk concentration of vitamin A (retinol) were 3.05±0.11, 1.84±0.10, 1.93±0.09, 2.84±0.19, vitamin E 26.87±1.80, 25.07±1.64, 38.16±1.71, 34.30±1.89, total carotene 15.49±1.44, 19.50±1.79, 42.39±1.99, 44.30±2.03 µg/g (p <0.05) respectively per months. In this study, lutein, cis-lutein, zexanthin, apoester, cantaxanthin and betacarotene were determined as individual carotene in goose egg yolks. GSH and ascorbic acid were detected in the egg albumin in April and May and results were as 2.81±0.16, 2.83±0.25, 4.66±0.77 and 5.09±0.38 µg/g respectively, and there was not any differences was detected between April and May (p >0.05).
