ABSTRACTMaster ThesisDETERMINATION OF TOXIC METALS IN NUTRIENTSSOURCED FROM KITCHEN UTENSILSEsra BÜYÜKASLANFirat UniverstyGraduate School of Natural and Applied Sciences,Department of Chemistry2006, Page: XV+85Colored painted and gilt porcelain dinnerwares are commonly desired because of theiraesthetic image. However, it should not be remembered that these colored paints are generallymetallic. Particularly, it is known that the metals are contained in these paints, Cd is cancerousand Pb has highly toxic and accumulate in brain. Although it is supposed that these metals doesnot release to meals, it should be taken into consideration that this will be able to depend on theproduction quality and usage period of dinnerwares. As a result, the extracted Cd and Pbamounts by using acetic acid of 4% within 24 h were limitted by national and internationalauthorities as 0.07 and 0.8 mg/dm2 for Cd and Pb, respectively.In this study, colored painted dinnerwares were extracted by using acetic, tartaric,citric, lactic acid as well as concentrated and 7-molar nitric acid. Then, the extracted Cd, Pb andZn concentrations were determined. It was observed that there is a continuous increase in theextracted (migrated) Pb concentration on surface of dinnerwares as depending on acidconcentrations (%). Migration from dinnerwares for Cd and Zn reaches to constant value afterdefinite concentration together with increase or decrease. Furthermore, it was found thatmigration arise by interaction of acetic acid in different periods and addition of NaCl to aceticacid (4% and 1%).Keywords: Cadmium, Lead, Zinc, Extraction (Migration), Glazed Porcelain Dinnerware,Atomic Absorption.
