Determination of species diversty and antibiotic suspectibility of staphylococcus isolated from organic dairy product

Abstract (EN)

Aim: In this thesis, it was aimed to determine the species level of Staphylococci, the presence of enterotoxins, the antibiotic susceptibility and biofilm formation of the detected Staphylococci in 104 organic milk and dairy products including milk, white cheese, goat cheese, kashar cheese, tongue cheese, yoghurt, kefir, ayran and butter. Material and Method: Classical methods were used for the isolation and identification of Staphylococ species. Vitek 2 Compact bacteria identification system was used to identify the isolates detected by classical methods. Determination of the presence of staphylococcal enterotoxin was performed using the ELFA method in the VİDAS device. Tube method was used to determine biofilm production and disk diffusion method was used to determine antibiotic susceptibility in staphylococcal isolates. Result: In the samples analyzed in this thesis study, S. aureus and as coagulase negative Staphylococcus (CNS); S. caprae, S. carnosus subsp. carnosus, S. equorum, S. hominis subsp. hominis, S. saprophyticus, S. sciuri, S. haemolyticus and S. xylosus species have been identified. S. aureus at the level of %1,92, CNS at the level of %12,5 and Staphylococcal enterotoxin at the level of %1,92 were found in the isolates obtained. While antibiotic susceptibility isolates were generally susceptible, varying levels of resistance were detected in some isolates. The distribution of biofilm production among isolates was generally weak and moderate. Conclusion: In this thesis study, detection of S. aures and some KNS species, the presence of enterotoxin and determination antibiotic resistance are important in terms of public health.
