Abstract (EN)

The Ottomans have a deep rooted history. They are perhaps the most analyzed empire among the old civilizations. The cuisine of this story of this rise from the steps to palaces is at least as important as itself. Ottomans who have created a specific cuisine while moving to sedentary life from nomadic life, have also created a prestigious table culture. So that: in Topkapı Palace, the kitchen (?matbah?) was so important that it was ranged over a surface of 5000m² and its staff was employed and used to work like a military troop. The simple but perfect mechanism of the imperial kitchen was run by more than 2000 people. Table etiquette and manners of the palace were also valid in the houses outside the palace walls and reflects Turkish hospitality, respect and culture. The Ottoman cuisine, with its table, plates, sherbet, sugar, halva, coffee and service is a complimentary part of a civilization since 700 years. Its tableware bears the traces of each specific period of history. It happened that ten thousands of people participated blankets or people joined the table of the Sultan.It is not easy to explain such a dynamic cuisine and table culture that experienced many changes during centuries under the influence of the various cultures within the Ottoman territory. No documentary had been made so far showing how they eat instead of what they eat. With this documentary made with a detailed work after a good research, we aimed to show another particularity of the Ottomans, which were known until now by their political, geographic and historical values.
