Abstract (EN)
Turkish cuisine represents a rich and diverse cultural heritage that has evolved over centuries under the influence of numerous internal and external factors such as historical developments, geographical conditions, and socio-economic structures. These factors have collectively shaped and enriched the culinary traditions of the region. Over time, Turkish cuisine has continued to develop and adapt, and to the extent that it can resist the transformative impact of modern technology and changing lifestyles, its influence remains visible in contemporary culinary practices. Among the many components of Turkish cuisine, the beverage culture—particularly Ottoman sherbets—holds a significant place. Historically, sherbets were not only consumed as refreshments but also served medicinal purposes and were commonly offered alongside meals. These beverages, prepared from various edible herbs, flowers, fruits, and vegetables, reflect the unique characteristics and artistry of Turkish culinary tradition. In recent years, however, traditional sherbets have become increasingly marginalized. This decline can be attributed to several factors, including the global expansion of fast-food chains, shifts in eating and drinking habits, technological advancements, and lifestyle changes. As a result, the role of sherbets in everyday life has diminished, raising concerns about the preservation and continuity of this cultural practice. This study investigates the reasons behind the decline of Ottoman sherbet culture in modern culinary contexts and explores how these traditional beverages can be preserved and adapted for contemporary use. The primary goal is to emphasize the cultural and historical significance of sherbets and to identify sustainable methods for integrating them into present-day gastronomy. To achieve this, a qualitative research approach was employed. A literature review was conducted to understand the historical background of sherbets, followed by interviews with chefs and food industry professionals. These interviews were analyzed using the MAXQDA 2024 qualitative data analysis software. A Hierarchical Code-Subcode Model was applied during the analysis to systematically code the data and derive meaningful themes. The findings indicate that participants view Ottoman sherbets not merely as traditional beverages but also as healthy, innovative, and adaptable elements that can enrich modern gastronomy. The insights gained from the interviews reveal a strong potential for incorporating sherbets into contemporary culinary settings, provided that culturally sensitive and multidimensional strategies are adopted. Overall, the study highlights the dual value of Ottoman sherbets—as both a cultural heritage to be preserved and a unique gastronomic asset with relevance in today's food culture. Additionally, the research underscores the significant potential of sherbets in promoting cultural sustainability and gastronomic tourism.
