Abstract (EN)

This research has been done to evaluate the effects of seasonal changes on %water, %protein, %lipid and %ash of some commercial fish species; hake (Merluccius merluccius), striped mullet (Mullus barbatus) and common pandora (Pagellus erythrinus) which were catched from Saroz Bay with trawl nets. For this purpose, the samples were collected between January/2007 and February/2008. For hake (Merluccius merluccius) species, during winter, %water, %protein, %lipid, %ash and %carbonhydrate concentrations were found as 79,36; 15,70; 2,02; 1,22 and 0,44 respectively. In spring these values were recorded as 82,31; 14,31; 1,87; 1,31 and 0,20 respectively. The records were 85,21; 12,10; 1,25; 1,10 and 0,33 in summer, and 85,12; 12,24; 1,32; 1,14 and 0,18 in autumn, respectively. For striped mullet (Mullus barbatus) species, during winter, %water, %protein, %lipid, %ash and %carbonhydrate concentrasions were found as 76,07; 18,58; 4,00; 1,24 and 0,11 respectively. In spring these values were recorded as 72,17; 19,50; 6,77; 1,31 and 0,25 respectively. The records were 76,43; 16,39; 5,82; 1,06 and 0,30 in summer, and 77,00; 17,52; 3,80; 1,15 and 0,35 in autumn, respectively. For common pandora (Pagellus erythrinus) species, during winter, %water, %protein, %lipid, %ash and %carbonhydrate concentrasions were found as 83,10; 13,59; 1,73; 1,18 and 0,40 respectively. In spring these values were recorded as 82,94; 13,32; 2,02; 1,27 and 0,45 respectively. The records were 83,69; 13,29; 1,65; 1,23 and 0,24 in summer, and 84,21; 12,66; 1,46; 1,18 and 0,49 in autumn respectively.
