Abstract (EN)

In this study, the changes in the lipid oxidation and protein quality of ice stored rainbow trout (Oncorhynchus mykiss) fed with three different selenomethionine supplementations were observed. Thiobarbitüric acid (TBA, mg malonaldehyde/kg. muscle) value for lipid oxidation and sodyum dedocylsulfade polyacrylamide gel electrophoresis (SDS-PAGE) for protein quality were analyezed. In the study the selenium supplemantation in diets were used as a control group 0 mg/kg Se for 1st group, 1mg/kg Se for the 2nd 5mg/kg Se for the 3rd and 10mg/kg Se for the 4th. The signifacant decrease was found in TBA values of ice stored rainbow trout muscle fed with diets supplemented different levels of selenomethionine, during storage(p<0.05) . At the end of the electrophoretic study, the denaturation of the myofibriller proteins occured at the beginning of the storage and an did not change during the storage. As a result of the study, it was found that selenomethionine supplementation was able to retart the lipid oxidation, while it wasn?t able to protect protein denaturation during ice storage.
