Factors affecting in-flight catering sales revenue: An airline implementation

In low-cost airline companies, the most important revenue item after ticket sales is in-flight catering, which is included in the side income. The model airline, which has a low-cost business model, is the second largest airline in Turkey with the widest flight network both at home and abroad. The aim of this study is to determine which variables are effective in the catering sales offered by the sample airline on its international flights and to determine the positive/negative effects of these variables on the catering revenue turnover. In the study, correlation analysis was applied to test whether all variables on the data obtained from the sample airline company were related to each other as a research method, and regression analysis was applied in order to determine the variables affecting the catering revenues of international flights and to find the effect rates of these variables on revenue. This research aims to increase knowledge on the factors that shape attitudes towards catering revenue in the international flight network. In the models created within this scope, all international flight statistics of Pegasus Airlines between May and October 2022 were used. The analyzes showed that factors such as the length of the flight time, the number of ethnic passengers (Turkish / Foreign) and the preorder purchased before the flight had a positive effect on the desire of the passengers to purchase catering, and these variables and the changes in income were explained by %37.
