Investigation of phenolic compounds and antioxidant capacities of some blueberry varieties grown in Uludag

Abstract (EN)

In this study, total anthocyanin, total flavonoid, total phenolic compounds, antioxidant capacity and bioaccessibility of blueberries varieties (Vaccinium spp.) grown in Turkey were investigated. Total phenol content was determined by Folin-Ciocalteau method and antioxidant capacity was determined by ABTS, CUPRAC and DPPH methods. A total of six phenolic standards have been screened in the blueberry varieties. The most abundant phenolic acids were determined to be ferulic acid (12,50-147,90 mg/kg), naringin (2,50-108,70 mg/kg) and p-coumaric acid (2,70-100,20 mg/kg), respectively. Total anthocyanin was in the range of 5,15-55,11 mg/kg and total flavonoid was found in the range of 1,75-5,83 mg/g. The total extractable phenol content of the blueberry varieties was 884,75-1510,24 mg GAE/100 g and the total hydrolyzable phenol content was 800,62-1357,77 mg GAE/100 g. According to ABTS, CUPRAC and DPPH methods, the antioxidant capacity values of the extractable phenols of Uludağ 2 were higher than the other varieties. Total phenolics was more bioaccessible from the Gold Traube variety (81%). The bioaccessibility of antioxidant capacities of blueberry varieties was 78% (ABTS), 53% (CUPRAC), 31% (DPPH), respectively.
