Abstract (EN)
In this study, some quality parameters of Chandler walnut varieties grown at different heights have been investigated. The research has been carried out in three different villages with an average of 650 m, 800 m and 900 m elevations in the town of Eşme in Uşak. Various chemical properties of walnut fruits taken from each region, such as height, shell thickness, internal weight, fruit weight, inner color, and physical properties such as dry matter, moisture, ash, protein, oil, mineral matter and fatty acid composition have been investigated. As a result of the research, it was determined that although the height of fruit, fruit width, fruit weight, inner weight and shell thickness increased as the altitude increased, the yellow gloss value of walnut inner ratio and shell color decreased. In addition, the chemical composition of dry matter, moisture values have not changed, fat, total nitrogen, protein, ash, mineral matter and fatty acids have been found to be significantly affected by the composition.
