Reviev of criteria for traditional kitchen and modern in Van region

Houses have emerged as mankind's need and are the first examples of architectural history. They are developed in different ways until today from the first phase of the era and change in terms of type according to the location. As a result, the houses are effected by the economic structures, political, cultural, religious, climatic, topographic effects of the era. The industrial revolution has influenced the kitchen culture because of the fact that it effected social relationship so the civilizations in Anatolia integrated in food culture. Most of food which is essential in human nutrition is moved to another regions of the world. The kitchen culture of a society is closely related to living conditions[1]. Change of life will also change the shape of the food culture. In the first era, human had to collect plants found in the nature and hunt animals to sustain their lives. As time passes, they grow them in accordance with local conditions and used in the winter by storing with simple techniques[2]. They have benefited from animals and plants of the each region where they emigrated. The Turks are a society which gives importance to the nutrition so much. Meal is not only to satiate the abdomen; but also emerge as the part of cultural patterns. In this sense, meal is an integrated case of religious ceremonies, weddings, entertainment, death and social behaviours. In Van, there is a well-established and versatile kitchen design which contains the original effects of the kitchens. In this work, beside history, economy and local features of this province, cuisine culture's effect on architectural layout and its spatial Feature of this place give us a chance to compare these buildings with the hauses that state Housing Agency (Toplu Konut İdaresi) builds. Also, when they are compared, we have a chance to come up with suggestions.
