Abstract (EN)

Miller collected from 5 different gardens in Van province and the effect of different extraction methods and conditions on TMA extraction were investigated. The bud, leaf and normal leaf weights of the samples were 4.24-5.21 g, 2.15-2.75 g and 1.97-2.51 g; petal areas were 5.87-6.18 cm2; L *, a *, b *, C and h° varied between 47.79-65.06, 26.79-41.44, (-9.88)-(-46.20), 28.56-60.83, 315.85-339.72, respectively. The DM, °brix, ash, pH and titration acidity of the samples were determined as average 18.65%, 11.11%, 3.24%, 5.45, 0.11 mg/100 g, respectively. L-Ascorbic acid, TMA, TFM and TFL contents varied in the range of 943.53-1740.48 mg/kg DM, 403.90-595.94 mg cyanidin-3-O-glucoside/100 g DM, 3747.16-5338.07 mg GAE/100 g DM, 72.09-98.81 mg Ku/g DM, respectively. DPPH and ABTS amounts varied between 1542.56-1721.13 mmol Trol. Eq./g DM and 374.55-411.39 mmol Trol. Eq./g DM, respectively. Catechin, ellagic acid, rutin, gallic acid and two different anthocyanins in methanolic extracts of samples were detected. KL values were 0.922, 0.324 and 0.068 mL/cm2 min at 60, 40 and 20°C in classical extraction, respectively. In ultrasonic extraction, KL values at 100, 75, 50% ultrasound amplitude were 7.812, 3.822 and 2.178 mL/cm2 min, respectively. In the study, it was observed that TMA extraction, which takes 210 min at 60°C with classical extraction, can be shortened up to 18 min at 100% ultrasound amplitude by ultrasonic extraction. As a result, it was determined that anthocyanins can be extracted faster and with higher yields by ultrasonic extraction.
