Abstract (EN)

In this study, it was aimed to determine the suitability of new released Guz Gulu and Bozbey grape varieties in cold storage at Tekirdag Viticultural Research Institute. Normal atmosphere without any treatment (control), modified atmosphere packaging (MAP), MAP + sulfur dioxide generator pad (MAP + SO2) application was investigated on grape quality and storage time. The clusters were placed in polypropylene trays. After the treatments, clusters were kept at 0-1 °C and 90±5% relative humidity for 100 days in cold storage. In order to determine grape quality characteristics, physical and chemical analyzes such as weight loss, total soluble solids content, titratable acidity, berry firmness, color measurement, total phenolic compounds content, total monomeric anthocyanin content, antioxidant activity, sulphur dioxide content, decay rate, rachis skeleton color, sensory evaluation and bleaching values were conducted at 20-day interval throughout the storage period. Consequently, it was determined that Guz Gulu grape cultivar stored at cold storage could be kept marketable up to 20 days with normal atmosphere without any application, 60 days with MAP application and 80 days with MAP + SO2 application and Bozbey grape cultivar stored cold room could be kept marketable up to 20 days with normal atmosphere without any application, 40 days with MAP application and 80 days with MAP + SO2 application.
