Abstract (EN)

Yersinia is a gram negative, food based, enteric pathojen that is prevailing in water, milk and meat. As being among important pathogen bacteria's in foods and related to many gastrointestinal diseases, the importance of Yersinia enterocolitica increases and it is becoming the subject microbiological and epidemiologic researches. In this study from three parts ( legs, necks and pelvis) of 25 carcass of sheep in Yuksekova region are studied in order to find out the presence of Yersinia and to examine if it constitute a risk for public health. At the identification stage different biochemical tests are used to report the presence of Yersinia and the other verities of bacteria's. In the experiment that has been done for this study no Yersinia is found in the legs, neck and pelvis part of the carcasses of sheep. But from totally studied 75 samples in 5 samples only Y. rucker was recorded. This bacteria was recorded in legs of 2, in neck of 2 and pelvis of one carcass'. This bacteria is recorded at the neck and pelvis part of only one of those carcass'. As a result; in this study the foodborne Yersinia is not recorded in the examined samples, but 16% percent of Y. ruckeri which is known as fish protein was available. It is considerd that the presence of Y.ruckeri could refer to availability of other pathogenic microorganisms and these bacteria's can not only harm fish protein but also cause injury infections of human beings. It is considered that the rules that are necessary for the elimination of these bacteria's should be applied just as the prevention rules used for zoonotic diseases. Keywords: Public health, sheep carcass, Yersinia ruckeri, Yüksekova
