In this study, the effects of antioxidant enzymes, lipophilic vitamins, fatty acid composition and malondialdehyde (MDA), glutathione (GSH) and oxidized glutathione (GSSG) levels of Saccharomyces cerevisiae to which AICI3 was added to the culture medium supplemented with Abelmoschus esculentus L. (Okra) Seed aqueous extract. effects were examined. Within the scope of the experiment, control, 0.2 g okra seed, 0.4 g okra seed, 0.8 g okra seed and their AICI3 added groups were used. According to our findings, it was determined that the amounts of total protein and malondialdehyde decreased in the groups to which AICI3 was added. While glutathione level increased in the seed groups, it was found to partially decrease in the groups to which AICI3 was added. GSSG level did not show a significant change in the groups with AICI3 added. Superoxide dismutase (SOD) enzyme level decreased in the AICI3 supplemented groups compared to the control group. There was a significant decrease in catalase and GST enzymes in the groups to which AICI3 was added. Compared to the control group, it was determined that there was an increase in vitamin D3 and K1 in the AICI3 supplemented groups, while there was a decrease in vitamins K1. Vitamins A TOC, Esterol, Sterol and B Sterol increased in the groups containing AICI3. In saturated fatty acids, a decrease in the amounts of Myristic acid, Pentadecylic acid and Stearic acid was determined in the groups containing AICI3. In unsaturated fatty acids, Palmitoleic acid, Penadecenoic acid and Gamma linolenic acid levels decreased in the groups containing AICI3, while Linoleic acid level increased in the groups containing AICI3. As a result, it was determined that adding AICI3 to the culture medium of S. cerevisiae created oxidative stress, activated the antioxidant defense system, increased lipid biosynthesis and decreased other metabolic enzymes.
