Abstract (EN)
In this thesis, it is aimed to produce which has functional and physico-chemical properties with high fiber content. In the study, alternative dietary fiber sources were examined. Production conditions and parameters have been arranged in order to obtain the highest level of efficiency from the selected raw material. For this purpose, sunflower (Helianthus annuus L.), pea (Pisum sativum L.), watermelon (Citrullus lanatus L.), celery (Apium graveolens L.), leek (Allium porrum L.) and onion (Allium cepa L.) were selected and fiber analysis were carried out. Leeks from 6 different products were selected as raw materials. It has been effective in the selection of raw materials that insoluble fiber rich and lack of studies in the literature. Three different methods were used in the production of dietary fiber. The selection of the enzyme-enzyme group that used enzyme applied production (EU) was carried out. For this purpose xylanase, hemicellulase-xylanase and cellulase enzymes were used and the cellulase enzyme, which provides the highest fiber yield, has been selected for production purposes. After that, the production conditions that provide the highest fiber yield were determined and EU was realized. EU values were compared with non-enzyme fiber production (ESZU) and control group (KG). Physical and chemical analyzes were performed also fiber contents of the samples were determined with 3 different methods. When the production results were examined, the product with a total dietary fiber content of 86.45 ± 1.19% was obtained with EU. 44.78 ± 1.55% of the total dietary fiber content was obtained with ESZU and 18.48 ± 1.75% of the total dietary fiber content was obtained with KG. When the results are evaluated, it is seen that fiber yield increased 467.80% by EU compared to KG. Compared to the ESZU, an increase of 242.31% has been achieved by EU. Compared to the other 2 groups, EU was provided that increase in unit density, oil absorption capacity, water retention and water binding capacity (p<0.05).
