Abstract (EN)
In this study, determination of total phenol, flavonoid, antioxidant activity and metal content (Na, K, Ca, Mg, Fe, Zn, Mn, Cu, Ni, Cd, Cr, Pb, Co, Al) for linden and mint supplied as packed unprocessed from three different regions and processed in three different brands, the reliationship between the total amount of phenolic/flavonoid and antioxidant activity with the amount of metal was aimed to investigate as statistical. The UV-VIS spectroscopy and ICP-OES technique were used in determine the amount of total phenol/flavonoid and metal, respectively. The Gallic acid in determination of total phenol and quercetin in determination of total flavonoid were used as standart. The antioksidant activity was determined by the metod of metal chelating activity. To determine of metals and total phenol/flavonoid amounts and of antioksidant activities in Anise and Fennel, were used samples which obtained results infusion, decoction, dry ash and extraction. All processes, for each one samples and analysis were replicated three times. Highest total fenol content, for infusion, decoction and extraction, were obtained for anise (6399 µg GA / gr sample, 7879 µg GA / gr sample ve 7376 µg GA / gr sample). Highest total flavonoid content, for infusion, decoction and extraction were obtained for anise (11785 µg QE / gr sample, 11638 µg QE / gr sample ve 23376 µg QE / gr sample). Highest metal chelating activities, for infusion, decoction and extraction were obtained for fennel (78,31%, 78,14% ve 52,37%). Highest total phenol/flavonoid amounts were obtained with extraction metod. Highest metal contents were obtained with dry ash metod.According to the results obtained, the variation according to the metal content of the total phenol/flavonoid and antioksidant activities was evaluated statistically (SPSS 17.0).
