Abstract (EN)

The nutrient demand which is necessary for the continuing of human life revealed changeable kitchen culture. The components like geographical characteristics of the area which people live, historical process, religion, economical activities, custom and usage, affects directly the kitchen culture. During the time, kitchen culture changes because of the reasons like economy, modernization, technological improvements, urbanization and migration.In this study, society kitchen culture belongs to city Ankara, district Çubuk, its center and villages, analyzed from folklore perspective, the reasons and results of the changing and conversion in the kitchen culture from the past to the present had been displayed. At the same time in this study, with analyzing the areas formed around a cultural heritage that should be prevented; ?kitchen culture? which is expressed by UNESCO as ?Intengable Cultural Heritage?, the oral culture items which are in a circulation in these areas determined and analyzed again on the axis of change and transformation concepts.Within the concept of this study, leading the informations which are taken from source people from the field, food belongs to the region, cooking methods and kitchen tools, cellar culture, beliefs related with eating-drinking, ceremonial meals and the reflection of kitchen culture to folk literature discussed.
