INVESTIGATIONS ON QUANTITATIVE DETERMINATIONS OF SYTHETIC DYECONTENT IN SOME FOOD PRODUCTS FROM ANKARA MARKETÖğrencinin Adı : Ecz. SUMMARYPurposes of this study are establishing existence of the the syntheticdyes which is not allowed to add into jams, fruit yogurt, fruit juices anddetermining the kind and amount of synthetic dyes which are allowed to addin sugar-coated apples, nonalcholic drinks according to the Turkish FoodRegulations.In this study 40 jam samples, 40 fruit juice samples, 40 fruit yogurtsamples, 20 non-alcholic drink samples supplied from Ankara market and 20sugar-coated apples supplied from 2 different pastry-shop have beenanalysed. Total 160 samples have been analysed.Wool coloring method has been used for the extraction of all samples.Paper Chromatography method has been used for the qualitative analysis ofthe exracted dyes. Derivative Spectrometer method has been applied tosynthetic dyes determined in the sugar-coated apples and non-alcholic drinkswith aroma for the quantity analysis.According to this study, it established that Jams, fruit juice and fruityogurt samples does not contain any synthetic dyes and suitable for TurkishFood Regulation.Average amount of the Ponceau 4R in the sugar-coated apple samplessupplied from the pastry-shop ?A? was determined as 2265.3140 ± 36.0215INVESTIGATIONS ON QUANTITATIVE DETERMINATIONS OF SYTHETIC DYECONTENT IN SOME FOOD PRODUCTS FROM ANKARA MARKETÖğrencinin Adı : Ecz. Average amount of the Ponceau 4R in the sugar-coated apple samplessupplied from the pastry-shop ?B? was determined as 584.47 ± 3.5281 mg/kg.In this study it has been determined that amount of the synthetic dyes in thesugar-coated apples supplied from two different pastry-shop are higher thanthe maximum limit suggested in the Turkish Food Regulation.In this study, total average amount of synthetic dyes in non-alcholicdrink with aroma samples which contains Ponceau 4R together withAzorubin is determined as 49.2404 ± 0.0002 ml/l. And this amount is remainsunder the maximum limit suggested in the Turkish Food Regulation.
