Antibiotic resistance and isolation of Listeria monocytogenes, Staphylococcus aureus, Aeromonas hydrophila from "döner kebap" varieties offered for consumption in Ankara

Abstract (EN)
In this study, the microbiological properties of the ?Döner Kebap? varietiesoffered in restaurants and buffets located in the town of Ankara have beeninvestigated. 25 raw and 25 cooked meat Döner kebap samples and 25 raw and25 cooked chicken Döner kebap samples have been worked. The frequency ofthe patogen microorganisms, namely Listeria monocytogenes, Staphylococcusaureus, and Aeromonas hydrophila have been determined. The rate of isolationof the specified microoorganisms in the raw meat samples are as follows: L.monocytogenes %16 ( 4 samples), S. aureus %32 (8 samples), A. hydrophila%64 (16 samples). In case of cooked meat Döner kebap samples, no A.hydrophila was detected, L. monocytogenes and S. aureus were isolated at therate of %4 (1 sample) and %20 (5 samples) from cooked chicken döner kebap,respectively L. monocytogenes %4 (1 sample), S. aureus %16 (4 samples), A.hydrophila %4 (1 sample) were obtained. Furthermore, antibiotic sensitivitytests have have been applied to the isolates of L. monocytogenes, S. aureus andA. hydrophila obtained from raw and cooked döner. Kirby -Bauer discdiffusion method was used for the tests and sensitivity was determined usingviieight different antibiotics in Mueller Hinton Agar media. The study shows thatall L. monocytogenes isolates obtained from meat and chicken döner kebapsamples are susceptible to Ampicillin, Gentamicin, Erythromycin, Tetracyclin,Chloramphenicol, Sefalotin, Streptomycin and Vancomycin. All S. aureusisolates are sensitive to Gentamicin, Erythromycin, Tetracyclin,Chloramphenicol, Sefalotin, Streptomycin and Vancomycin. %80 and %92,3 ofS. aureus isolates obtained from raw and cooked chicken and meat dönerkebaps were resistant to Ampicillin. The study also shows that A. hydrophilastrains isolated from meat and chicken döner samples were resistant toGentamicin, Erythromycin, Tetracyclin, Chloramphenicol, Sefalotin,Streptomycin.Key Words : Döner-kebap, Listeria monocytogenes, Staphylococcus aureus,Aeromonas hydrophila, meat, chicken, antibiotic resistance
