Identification and biological characteristics of lactic acid bacteria isolated from breast milk by MALDI-TOF MS

Abstract (EN)
In this study, it was aimed to identify lactic acid bacteria isolated from breast milk by MALDI-TOF MS and to determine their biological properties. The resistances of 12 isolates used in the study at pH2 and pH3 pepsin, bile salt and pancreatin media were investigated. In addition, in vitro antioxidant properties and EPS contents of the isolates were studied. As a result of the study, 12 isolates were found to be similar or more resistant to the standards in the gastric pH pepsin, bile salt and pancreatin media. However, it was determined that L. brevis 18 isolate contained more EPS than other microorganisms. According to DPPH scavenging activity results, P. pentosaceus 1, 10 and 11, L. plantarum 13 and L. brevis 18 isolates showed lower activity than BHA and AA standards but higher than standard microorganisms. According to ABTS radical scavenging activity results of isolates, it was determined that all isolates exhibited similar activity to standard antioxidants. Considering all the results, it was observed that L. brevis isolate 18 showed better activity than other strains and microorganisms used as standard. According to the results of the study, it can be thought that in the case of in vivo studies of these microorganisms, drug-like food supplement products will make significant contributions to the food and pharmaceutical industry.
