Abstract (EN)

Edible grapevine leaves can be consumed as fresh or pickled. Leaves are usually collected from vineyards and then sold as fresh or brined. In our country, the leaves of Sultani Çekirdeksiz and Narince varieties are evaluated as brine. The aim of this study was to determine the feasibility of the leaves collected from bare roots vine saplings. The material of the experiment was composed to the leaves collected of three sapling types (Narince own-roted, Narince and Sultani Çelkirdeksiz grafted on 1103 P) and 6 aged Narince grapevines.Cuttings were planted in a single row (16 666 cutings /da) with 1 m x 6 cm spacing from the nursery parcel. Edible leaves were collected from saplingsin two harvest periods and processed in brine. Leaf yield, leaf width, leaf length, leaf area, leaf weight in fresh leaves; leaf color in leaf leaves (L, a *, b *), 100 g leaf energy (kcal), ash (%), moisture (%), protein (g), carbohydrate (g), dietary fiber (g), fat ( g), Vitamin C (mg), vitamin K1 (µg), vitamin E (mg), total phenolic compound mg GAE), total acidity (g / l), Ca, Fe, Mg, Mn, P, K, Zn, Cu contents in brined leaves were determined. The stuffed grapevine leaves with olive oil prepared with the same internal material were subjected to sensory testing by 16 panelists. In general, saplings leaves were found to be smaller in size and delicate. Depending on the final take ratio and sapling type, 102.5-186.0 kg of edible leaves were collected from the decares in two harvests.The leaves collected from their saplings were found to be very superior in terms of nutrient content compared to the leaves collected from the vineyard. The leaves collected from saplings were found to be extremely suitable for consumptionin terms of fiber, hardness, shape and hairiness. The highest sensory test score was obtained from the leaf samples taken from the grafted Narince seedlings. The evaluation of the leaves in the nurseries is recommended for the suspension seedling transmission that employs fixed workers.
